Pie Filling: 1. Preheat oven to 350 degrees F. 2. In a medium saucepan, combine 2/3 cup sugar, cornstarch and salt. 3. Cook over medium heat until mixture begins to boil, stirring constantly with wire brisk. 4. Add cranberries and cored, sliced apples; then, reduce heat to low and cook, covered, stirring occasionally for 12 to 15 minutes or until the cranberry skins pop. 5. Stir in grated lemon peel. 6. Remove pan from heat and set aside while preparing 3 egg white meringue. 7. Make meringue (see below). 8. Pour filling into baked pie shell and spread meringue over hot filling, sealing pie to the crust. 9. Bake 10 to 12 minutes or until golden. |
